Ingredients

all 14 types
  1. For the meatloaf:
  2. 225g lean minced beef
  3. 225g lean minced pork
  4. Breadcrumbs made with 1 ½ slices medium wholemeal bread
  5. 2 tbsp chopped fresh mixed herbs (parsley, thyme, oregano)
  6. 1 small red onion, finely chopped
  7. 1 medium eating apple, grated
  8. 1 tsp ground black pepper
  9. For the onion gravy:
  10. 2 red onions, finely sliced
  11. calorie-controlled cooking spray
  12. 4 tsp reduced salt gravy granules made with ½ pint (285ml) water
  13. 1 tsp wholegrain mustard
  14. 1 tbsp finely chopped fresh chives

Step 1

Preheat the oven to 190°C/gas 5. Mix all the meatloaf ingredients together in a large bowl and season to taste.

Step 2

Press the mixture into a 450g loaf tin. Cover with foil and bake in the oven for 1¼ hours until cooked through.

Step 3

Meanwhile, to make the onion gravy, heat a non-stick pan, add the onionswith three sprays of low calorie spray and dry-fry over a moderate heat until the onions start to brown. Add ½ pint of cold water and stir. Mix the gravy powder in a separate jug with 2 tbsp cold water and stir into the pan.

Step 4

Simmer gently to thicken, adding more water if required, then stir in the mustard and chives. Delicious poured over the meatloaf.
