Ingredients
all 11 types- 750g ripe tomatoes, roughly chopped
- 300ml passata or tomato juice
- 2 tbsp red wine vinegar
- 1 tbsp olive oil
- a few drops Tabasco (optional)
- 1 red onion, finely chopped
- half cucumber, chopped small
- 1 green pepper, deseeded and finely chopped
- large bunch fresh basil, torn
- freshly ground black pepper
- ice cubes, to serve
Directions

Place half of the tomatoes in a food processor or blender along with the passata, vinegar, oil, sugar and Tabasco (if using). Blend until smooth, if the mixture is a little thick then add a little more tomato juice.
Step 2
Stir through the remaining ingredients, add a few ice cubes and serve.
