Ingredients

all 11 types
  1. 750g ripe tomatoes, roughly chopped
  2. 300ml passata or tomato juice
  3. 2 tbsp red wine vinegar
  4. 1 tbsp olive oil
  5. a few drops Tabasco (optional)
  6. 1 red onion, finely chopped
  7. half cucumber, chopped small
  8. 1 green pepper, deseeded and finely chopped
  9. large bunch fresh basil, torn
  10. freshly ground black pepper
  11. ice cubes, to serve

Directions

Step 1

Place half of the tomatoes in a food processor or blender along with the passata, vinegar, oil, sugar and Tabasco (if using). Blend until smooth, if the mixture is a little thick then add a little more tomato juice.

Step 2

Stir through the remaining ingredients, add a few ice cubes and serve.
