Ingredients

all 6 types
  1. 1 small courgette (100g)
  2. Juice from ½ lemon
  3. 1 tsp olive oil
  4. 2 large handfuls rocket (80g)
  5. 25g Feta cheese, cubed
  6. Large handful of mint, leaves chopped (25g)

Directions

Step 1

Preheat grill to medium-high.

Step 2

Cut the courgette into 0.5cm slices, toss in a bowl with 1tbsp lemon juice and 2tsp sunflower oil.

Step 3

Grill for 4-6 minutes each side, until lightly browned.

Step 4

Mix the courgette through the rocket, add the feta, season with black pepper to taste and serve.
