Ingredients
all 15 types- 500g minced turkey breast
- 1 onion, grated
- 1 red chilli, deseeded and finely chopped
- 1 tsp ground cumin
- 1 tsp allspice
- 1 tbsp fresh parsley, finely chopped
- 4 cloves garlic, crushed
- 6 wooden skewers
- 150g Savoy cabbage, thinly sliced
- 1 red onion, thinly sliced
- 2 large tomatoes, thinly sliced
- 100g cucumber, thinly sliced
- 1 tbsp fresh parsley leaves
- 1 tbsp fresh mint leaves
- juice half lemon (plus wedges to serve)

Soak the wooden skewers in water while preparing the koftas.
Step 2
Mix all the kofta ingredients together, divide the mixture into 6, and roll into sausage shapes. Thread on skewers and refrigerate for 15 minutes.
Step 3
Grill for 10-12 minutes turning regularly, check they are cooked through.
Step 4
Mix all the salad ingredients together, divide between 6 plates, then top each with a kofta.
