Ingredients

all 15 types
  1. 500g minced turkey breast
  2. 1 onion, grated
  3. 1 red chilli, deseeded and finely chopped
  4. 1 tsp ground cumin
  5. 1 tsp allspice
  6. 1 tbsp fresh parsley, finely chopped
  7. 4 cloves garlic, crushed
  8. 6 wooden skewers
  9. 150g Savoy cabbage, thinly sliced
  10. 1 red onion, thinly sliced
  11. 2 large tomatoes, thinly sliced
  12. 100g cucumber, thinly sliced
  13. 1 tbsp fresh parsley leaves
  14. 1 tbsp fresh mint leaves
  15. juice half lemon (plus wedges to serve)

Directions

Step 1

Soak the wooden skewers in water while preparing the koftas.

Step 2

Mix all the kofta ingredients together, divide the mixture into 6, and roll into sausage shapes. Thread on skewers and refrigerate for 15 minutes.

Step 3

Grill for 10-12 minutes turning regularly, check they are cooked through.

Step 4

Mix all the salad ingredients together, divide between 6 plates, then top each with a kofta.
