Ingredients

all 8 types
  1. 4 boneless and skinless chicken breasts (150g each)
  2. 500gpotatoes, unpeeled and cut into wedges
  3. grated rind and juice 2 lemons
  4. 1 tbsp olive oil
  5. 200ml chicken stock
  6. 4 cloves garlic, peeled
  7. 2 tbsp fresh parsley, chopped
  8. freshly ground black pepper

Directions

Step 1

Preheat the oven to 200ºC/gas 6.

Step 2

Place the chicken in an ovenproof dish and arrange the potatoes around it.

Step 3

Mix together all the remaining ingredients, except the parsley, and pour over the chicken.

Step 4

Cover with foil and bake for 35 minutes, remove the foil and cook for a further 15-20 minutes.

Step 5

Sprinkle over the parsley, season to taste and serve.
