Ingredients
all 8 types- 4 boneless and skinless chicken breasts (150g each)
- 500gpotatoes, unpeeled and cut into wedges
- grated rind and juice 2 lemons
- 1 tbsp olive oil
- 200ml chicken stock
- 4 cloves garlic, peeled
- 2 tbsp fresh parsley, chopped
- freshly ground black pepper
Directions

Preheat the oven to 200ºC/gas 6.
Step 2
Place the chicken in an ovenproof dish and arrange the potatoes around it.
Step 3
Mix together all the remaining ingredients, except the parsley, and pour over the chicken.
Step 4
Cover with foil and bake for 35 minutes, remove the foil and cook for a further 15-20 minutes.
Step 5
Sprinkle over the parsley, season to taste and serve.
