Ingredients

all 7 types
  1. 400g pack fresh potato gnocchi
  2. 1 tsp olive oil
  3. 2 tsp poppy seeds
  4. 100g frozen peas
  5. 75g chopped frozen spinach (defrosted with liquid squeezed out)
  6. 2 sprigs mint, chopped
  7. 100ml skimmed milk

Directions

Step 1

Cook the gnocchi as per packet instructions (usually about 1-2 minutes in boiling water). They're ready as soon as they float to the top.

Step 2

Drain and lightly toss in the oil. Sprinkle with the poppy seeds, ensuring they're evenly coated. Set aside.

Step 3

To make the swamp juice, add the peas, spinach, mint and milk to a pan, bring to boiling point and cook for 3.4 minutes. Remove from the heat and blend to a smooth sauce.

Step 4

Place the sauce into a dish and add the gnocchi. Use cocktail sticks to serve.
