Ingredients

  1. For the salad:
  2. 400g tin cannellini beans, drained and rinsed
  3. 200g tin tuna in water, drained and flaked
  4. 2 tomatoes, chopped
  5. quarter cucumber, chopped into chunks
  6. 1 small red onion, finely sliced
  7. For the dressing:
  8. grated zest and juice 1 lemon
  9. half tsp Dijon mustard
  10. 1 tsp sugar-free sweetener
  11. freshly ground black pepper
  12. lemon wedges and green salad, to serve

Step 1

Mix together all the salad ingredients in a large bowl.

Step 2

In a small bowl whisk together the dressing ingredients, season well. Pour over the salad and leave to infuse for at least 30 minutes. Serve with lemon wedges and a green salad.
