Ingredients

all 8 types
  1. 300g watermelon flesh (with rind removed)
  2. 100g rocket
  3. 5-6 sprigs mint leaves, torn
  4. 2 tsp olive oil
  5. 400g tin butter beans, drained
  6. 40g feta
  7. juice half lemon
  8. good grind black pepper

Directions

Step 1

Cut the watermelon into small slices and set aside.

Step 2

Scatter the rocket and mint leaves over a serving platter and drizzle with the olive oil. Arrange the melon over the leaves then scatter the butter beans and feta over the top.

Step 3

Drizzle with lemon juice and black pepper to serve.
