Ingredients

all 12 types
  1. 1 heaped tsp dried thyme
  2. 1 heaped tsp allspice
  3. 1 heaped tsp paprika
  4. 1 heaped tsp turmeric
  5. 1 heaped tsp oregano
  6. 1 tsp sage
  7. good grind black pepper
  8. 1 slice wholemeal bread, crumbled into 30g fine breadcrumbs
  9. 1 egg, beaten
  10. 450g chicken thighs, skin removed
  11. 1 tbsp plain flour
  12. 1 tsp rapeseed oil

Directions

Step 1

Preheat the oven to 180°C/gas4. Mix all the spices and herbs together with the breadcrumbs, making surethey are well combined.

Step 2

Beat the egg in abowl and set aside.

Step 3

Dredge the chickenwith the flour, shaking off any excess and dip each chicken thigh into thebeaten egg.

Step 4

Toss the chickenpieces in the spicy breadcrumb mixture ensuring each thigh is thoroughly coated.

Step 5

Lay the chicken on alightly oiled baking sheet and sprinkle any leftover spice mixture on top.

Step 6

Roast for 10 minutes,turn the pieces over and roast for another 10 minutes. Check the chickenis cooked through and serve.
