Ingredients

  1. half Savoy cabbage (about 400g)
  2. 1 leek (100g)
  3. 2–3 carrots (200g)
  4. 3 tbsp extra-virgin olive oil
  5. juice 1 lemon
  6. 1 heaped tsp grain mustard
  7. pinch pepper

Directions

Step 1

Remove any really thick stems, then finely shred the cabbage using a mandolin or food processor.

Step 2

Finely shred the leek and grate the carrots.

Step 3

Add the olive oil, lemon juice, mustard and pepper. Mix well and refrigerate for at least and hour before serving.
