Ingredients
all 7 types- 4 heads chicory, halved lengthways
- grated rind and juice 1 orange
- 1 tsp olive oil
- 1 tsp fresh thyme or pinch dried
- freshly ground black pepper
- 2 oranges, segmented
- 2 tsp orange zest, to garnish

Preheat the oven to 200ºC/gas 6. Place the chicory in an ovenproof dish. Mix together the orange rind and juice, oil and thyme. Drizzle over the chicory then season with plenty of black pepper.
Step 2
Cook for 25-30 minutes until tender and beginning to char. Toss together with the orange segments and serve drizzled with any cooking liquid and the orange zest. Cool a little or chill before serving.
