Ingredients

  1. 200ml apple juice
  2. 1 cinnamon stick
  3. 1 star anise
  4. 2 apples, peeled, cored, and cut into chunky wedges
  5. 3 pears, peeled, cored, and cut into chunky wedges
  6. 4 plums, destoned and quartered
  7. 4 figs, quartered
  8. 150g blackberries
  9. 30g porridge oats
  10. 60g plain flour
  11. 20g brown sugar (optional)
  12. 1tsp ground cinnamon
  13. 50g low-fat spread
  14. 4tbsp 0% fat natural Greek yogurt

Step 1

Put the apple juice, cinnamon stick and star anise in a saucepan and heat gently. Add the apples, pears, plums and figs. Simmer for around 20 minutes until the fruit is tender, adding the blackberries for the last 5 minutes. Remove the fruit with a slotted spoon and set aside. Continue cooking the liquid until it reduces to a sticky syrup. Remove the cinnamon and star anise, then pour the syrup over the fruit.

Step 2

Preheat the oven to 200°C,fan 180°C, gas mark 6. Mix the oats, flour, sugar and ground cinnamon together in a bowl. Rub in the spread using your fingers, until the mix resembles coarse breadcrumbs.

Step 3

Put the fruit into a 20cm x 22cm dish. Scatter over the crumble and bake for 20-25 minutes, until golden brown. Serve with 1tbsp Greek yogurt per serving.
