Ingredients

all 5 types
  1. 700g parsnips, peeled and quartered
  2. 1 tbsp polyunsaturated spread, melted
  3. 2 tbsp Parmesan cheese, grated
  4. 1 tsp fresh thyme
  5. freshly ground black pepper

Directions

4 steps in total
Step 1

Parboil the parsnips for 5 minutes in a pan of boiling water.

Step 2

Drain, then return to the pan and toss in the spread.

Step 3

Tip into a roasting tin, sprinkle with the Parmesan cheese and thyme and season well.

Step 4

Roast for 25-30 minutes at 200ºC/gas 6 until golden and tender.
