Ingredients

all 16 types
  1. For the meatballs:
  2. 1 slice wholemeal bread
  3. 2 tbsp skimmed milk
  4. 1 egg, beaten
  5. 500g turkey breast mince
  6. 2 cloves garlic, crushed
  7. I medium onion, grated
  8. 1 red pepper, very finely chopped
  9. 1 tsp oregano
  10. spray oil
  11. good pinch pepper
  12. To make the eyeballs:
  13. 2-3 thin slices red pepper
  14. 5-6 pitted black olives
  15. 100g light Mozzarella, cut into 20 small discs
  16. 20 cocktail sticks

Directions

Step 1

Place the bread into a small bowl and pour over the milk and egg. Leave to soak for 5 minutes, then mash with a fork.

Step 2

Meanwhile, mix the mince, garlic, onion, red pepper, oregano, and pepper and combine well. Mix in the egg and bread mixture

Step 3

Wet your hands and form into 20 pieces and roll into small balls (it's best to use your hands for this).

Step 4

Place onto a lightly-oiled baking sheet and put under a hot grill for 10-12 minutes, turning occasionally until browned all over and cooked through. Allow to cool a little.

Step 5

Insert a red pepper slice into each olive pit then carefully slice and place a disk of mozzarella on top.

Step 6

Stack the mozzarella slice underneath the olive pit and secure with a cocktail stick.
