Ingredients

all 11 types
  1. spray oil
  2. 200g jumbo rolled oats
  3. 200ml water
  4. 2 bananas, mashed (peeled weight 200g)
  5. 2 tbsp granulated sweetener
  6. 2 heaped tsp cinnamon
  7. 1 carrot, grated
  8. 1 courgette, grated
  9. 1 apple, unpeeled, cut into small chunks
  10. 100g dried apricots, roughly chopped
  11. 50g pumpkin seeds

Directions

Step 1

Preheat the oven to 180°C/gas 4. Lightly oil a large baking sheet.

Step 2

Add the oats to a bowl, stir in the water and set aside.

Step 3

In another bowl, beat the mashed bananas a little so they become almost creamy, and then add the sweetener and cinnamon.

Step 4

Next, add the carrot and courgette, and mix well. Add the soaked oats, apple, apricots, and seeds, and mix again.

Step 5

Spread out the mixture to a thickness of 1½–2cm thick and gently press down onto the baking sheet.

Step 6

Bake for 30–40 minutes. Check after 20 minutes and if it’s starting to get very brown around the edges cover with foil for the remainder of the cooking time.

Step 7

Allow to cool, cut into 16 portions and serve.
