Ingredients

  1. 2 tsp half-fat crème fraiche
  2. 4 tsp low-fat natural yogurt
  3. 1 tsp medium curry powder
  4. 1 tbsp fresh coriander
  5. 1 large (200g), boneless, skinless chicken breast, cooked and sliced
  6. 3 fresh apricots, sliced
  7. 1 mango, peeled and sliced (150g)
  8. 3 spring onions, chopped
  9. 60g rocket salad leaves
  10. 2 wholemeal pittas (70g each)

In a bowl, mix together the crème fraiche, yogurt, curry powder and coriander.

Step 2

Stir through the remaining ingredients and serve with couscous, toasted pitta or bread of your choice.
