Ingredients

  1. 100g basmati rice
  2. 400ml unsweetened coconut milk drink
  3. 300ml unsweetened soya milk
  4. 4 tsp granulated sweetener
  5. few drops vanilla essence
  6. 1 tbsp toasted coconut

Directions

Step 1

Place all the ingredients, except the toasted coconut, into a small pan. Place over a low heat and simmer very gently for 20–25 minutes until the rice is tender.

Step 2

Serve topped with the toasted coconut.
