Ingredients

all 6 types
  1. zest half lemon, finely grated
  2. 1 tsp lemon juice
  3. 1 level tsp lemon curd
  4. 1 heaped tbsp fat-free cream cheese (approx. 60g)
  5. 80g blueberries
  6. 2 rough oatcakes, crushed

Directions

Step 1

Mix the lemon zest, lemon curd and cream cheese together in a bowl.

Step 2

Gently crush half the blueberries with a fork and add the lemon juice.

Step 3

Add remaining blueberries to the cream cheese and lemon curd mixture.

Step 4

Place the crushed blueberries in the bottom of a glass, top with the lemon cheese, sprinkle with oatcake crumbs and garnish with some lemon zest and a blueberry.
